Skill – FISH – SHELLFISH MASTERCLASSES

THE MASTERCLASSES BELOW ARE FOR 2 to 4 PEOPLE ONLY. Many fish and shellfish classes have lots of people attending and one person teaching. At these classes you will do EVERYTHING INDIVIDUALLY and have the full attention of the chef.

Book a combination of these classes if you want to do a longer day – just ask for the price for the combination you require

Please note that fish courses are always subject to individual species being available on the day [and we are in the middle of the country so do not have control over inclement weather and fishermen] We use a great fishmonger [Fred Hallam in Beeston] – who do their absolute utmost to supply us with what we need and try to time these courses when there are plenty of choices around. However, if we are unable to obtain individual listed species, then we will have to rearrange with you or use an alternative species.

Understand how to use filleting knives easily and properly and what to look for when buying fish

Hands On: Learn how to fillet different fish, pinbone fillets, skin fillets and prepare the fish for cooking

A range of fish preparation skills will be demonstrated and then you will practise filleting, skinning and pinboning under our supervision

Food eaten at the class – none, soft drinks only

Practical Skill: Learn to take a crab apart and which parts are edible/how to get the best out of them in recipes

Understand how to take a crab apart easily and properly and learn which parts are inedible/what to look for when buying them and how best to use the meat

Hands On: Prepare a whole crab [for use at home] [individually]

All skills will be demonstrated and then you will undertake the taking apart of a crab under our supervision

Food eaten at the class – soft drinks only

Take Away: Crab meat from a whole crab [please bring 2 small tubs] and Factsheet with recipes

I feel I have learned quite a few things: the most important is to be confident to cook fish for a short time as it is tempting to over-cook it to make sure ‘it is done’; also to cook fish fairly simply, but to have a bold flavoured accompaniment; using knife skills; making sure your knives are sharp; using different types of fish (not just cod etc). I was particularly pleased at my attempt to bone the fish and prepare the squid. I would definitely recommend your course, and have done so to a few people. Best wishes Philip

OUR POPULAR FULL DAY ADVANCED FISH COURSE – IDEAL FOR THOSE WHO WANT TO PROGRESS FURTHER WITH A RANGE OF FISH/SEAFOOD SKILLS

Understand some advanced fish/seafood techniques properly as well as what to look for and which flavours to put with them. A great value session for those who are open minded about which species they learn about and who want to learn a wide range of more advanced skills. Past courses have included Wild Sea Bass – gutted through the gills, boned through the back and taken home to be stuffed “canoe-style” and baked, octopus, scallops [cooked flambe-style for lunch], cured seafood, crab skills, as well as advanced fish filleting and presentation skills. A busy session of mostly preparation with limited cooking skills included [to make the lunch]

Hands On: Prepare and understand how to cook a range of fish/shellfish. Species change according to what is fresh on the day – but there will always be a range of different skills and species to learn about. You will undertake as many skills as possible individually and take home the excess fish/shellfish
