IDEAL FOR THOSE WHO NEED BACKGROUND KNIFE SKILLS

Understand how to use filleting knives easily and properly and what to look for when buying fish

Hands On: Learn how to fillet different fish, pinbone fillets, skin fillets and prepare the fish for cooking

A range of fish preparation skills will be demonstrated and then you will practise filleting, skinning and pinboning under our supervision

Food eaten at the class – none, soft drinks only

ADVANCED FISH SKILLS COURSE – IDEAL FOR THOSE WHO ARE ADVANCED COOKS WHO WANT NEW SKILLS

Understand this advanced fish technique properly

Hands On: Gut through the gills, bone through the back and prepare it ready to stuff “canoe-style” for stuffing/cooking at home

Key skills are demonstrated before you undertake them individually

Suitable for: Anyone who has undertaken the orignal fish course here or already has strong fish preparation skills [the practical preparation skills are undertaken at a faster pace than our orignal course so you must be able to keep up]

Understand how to make fresh pasta dough by hand and machine and also how to use a pasta machine easily and properly.

Hands On: Learn how to prepare fresh pasta such as tagliatelle, spaghetti and lasagne sheets

All skills will be demonstrated and then you will practise under our supervision

Understand how to make fresh filled pasta easily and properly.

Suitable for: Anyone who wants to learn how to make filled pasta who has made pasta before. It is useful if you have already taken the introductory pasta class prior to this more advanced class. You will need to work at speed so it is better if you are not completely new to pasta making at this class

Sat 14th Apr 1pm GAME – Joint/Fillet/Stuff & Cook – £70 per person – SINGLE BOOKINGS ACCEPTED ON THIS DATE – CLICK HERE FOR DETAILS

IDEAL FOR THOSE WHO WANT TO LEARN ADVANCED PREPARATION SKILLS

Understand how to bone out birds easily and properly and learn how to prepare them with a stuffing for cooking. Also fillet a pigeon and cook the breasts in a starter/light lunch recipe with soy sauce and chorizo

Hands On: Individually joint and prepare a game bird [included in cost] – and stuff [for cooking at home] and fillet a pigeon [included in cost] and cook to eat at class

All skills will be demonstrated and then you will undertake the preparation of the birds under our supervision. As a group we will prepare a stuffing/flavourings so that the birds go home flavoured and ready to cook

Food eaten at the class – soft drinks only and pigeon recipe

Take Away: A stuffed game bird [please bring 1 tub around 1 litre in size] and recipes/factsheet

Hands On: Learn to pinbone a fillet of fish and prepare/fry it with crispy skin [with Mediterranean sauce]
