THE MASTERCLASSES BELOW ARE FOR 2 to 4 PEOPLE ONLY. Many meat preparation/cooking classes have lots of people attending and one person teaching. At these classes you will do EVERYTHING INDIVIDUALLY and have the full attention of the chef.

Book a combination of these classes if you want to do a longer day – just ask for the price for the combination you require

If you know how to cook already but don’t have the professional preparation skills and techniques to back this up – these are the classes for you! Advanced [and professional] cooks can choose to focus on the skills they don’t have and not waste time learning things they believe they know already. Beginner cooks can build up skills gradually using these classes.

Practical Skill: Learn to take a chicken apart, spatchcock the breast for the BBQ and prepare the joints for use in different recipes including simple boning skills

IDEAL FOR THOSE WHO NEED BACKGROUND PREPARATION SKILLS

Understand how to joint and prepare different parts of a chicken easily and how to prepare 2 simple marinades/flavourings

Hands On: Individually joint and prepare a chicken [included in cost] – and marinate/flavour [for cooking at home]

All skills will be demonstrated and then you will undertake the preparation of a chicken under our supervision

Food eaten at the class – soft drinks only

Take Away: A whole chicken, marinated in pieces [please bring 2 tubs around 1 litre in size each]

INDIVIDUAL LESSON: £100 per person

Suitable for: Anyone who wants to learn how to joint/prepare chicken and get ideas for flavouring it [skills are undertaken individually so different levels of competency are catered for]

CHICKEN – De-bone & Stuff

Practical Skill: Learn to de-bone a chicken and stuff it – 2 ways – either as a whole bird OR separating breast from legs/wings then de-boning and stuffing the legs and breast separately

IDEAL FOR THOSE WHO WANT TO LEARN SPECIALIST BACKGROUND PREPARATION SKILLS

Understand how to de-bone different parts of a chicken and stuff different parts for cooking

Hands On: Individually de-bone a chicken [included in cost] – and stuff [for cooking at home].

All skills will be demonstrated and then you will undertake the preparation of a chicken under our supervision. A demonstration of 2 methods will be shown and you will choose which method you practise at class – wither de-boning the bird as a whole OR the legs and breast separately

Food eaten at the class – soft drinks only

Take Away: A whole chicken, stuffed

Practical Skill: Learn to bone out a bird and stuff it for cooking as well as fillet a pigeon

Includes: FREE – A game bird to take away [stuffed for cooking] as well as pigeon recipe ingredients [for cooking as a starter later]

IDEAL FOR THOSE WHO WANT TO LEARN ADVANCED PREPARATION SKILLS

Understand how to bone out birds easily and properly and learn how to prepare them with a stuffing for cooking. Also fillet a pigeon ready to cook the breasts in a starter recipe with soy sauce and chorizo

Hands On: Individually joint and prepare a game bird [included in cost] – and stuff [for cooking at home] and fillet a pigeon [included in cost]

All skills will be demonstrated and then you will undertake the preparation of the birds under our supervision. The birds go home flavoured and ready to cook!

Food eaten at the class – soft drinks only

Take Away: A stuffed game bird [please bring 2 tubs around 1 litre in size] and recipes

Take a tour around our steak platter, looking in detail at the different cuts of steak and learn how to cook/rest them properly as well as what sauces to put with them
